Pietro Paganini, author of “I-Food, How to Evade Food Ideology?” reflects on the importance of food education that combines tradition, freedom of choice and innovation. Between the Mediterranean diet, risks of standardization and new technologies.

– Health begins in the kitchen. How important is it to promote education in this regard?

Nutrition education should be a pillar of socialization, starting in the family and school, and nowadays even online. However, it is not. We delude ourselves that we know what it means to eat well, but we often just appreciate the taste or authenticity of certain products without really understanding what we are consuming. In the age of knowledge, social and artificial intelligence, we paradoxically know a lot about many things, but little about what we put on our plates: the nutrients, the impact on our well-being, the ideal portions. We engage in cooking passionately – courses, videos, recipes on social – but rarely delve into what it really means to nourish ourselves. Educating ourselves about food means gaining freedom: consciously choosing a balanced diet, with the right caloric intake, the best nutrients, and without giving up pleasure. It is not just balance; it is also knowing how to indulge in some excess, but in the context of overall balance. Eating well is a form of mindfulness, an act of love toward ourselves and others.

– Why is the Mediterranean diet fundamental to our society socially and culturally?

The Mediterranean diet is not simply a set of dietary rules, but a method, a tool for building a balanced and adaptive lifestyle. It has deep roots in our culture and history, but it is also surprisingly modern. In different eras and different socio-economic contexts, the Mediterranean diet has guided us in making conscious choices: what to eat, how to balance the calories we take in with the calories we spend, how to live leisure time, socialize, rest. It is a model that does not impose, but adapts, promoting well-being and longevity. It is precisely this ability to adapt to individual needs that makes it compatible with precision nutrition, one of the challenges of our future. It is a method that evolves with us, respecting the diversity of each person, keeping balance at the center. In contrast, diets as commonly understood are rigid, ideological, geared toward short-term goals such as weight loss. They cannot offer the lasting well-being that the Mediterranean diet guarantees instead, through a multidisciplinary perspective that values taste, health and sociality. This approach, which combines tradition and innovation, is also a response to our need for awareness in an increasingly complex and interconnected world. A way to stay true to ourselves, without giving up the opportunity to look forward.

– In your latest book, “I-Food, How to Evade Food Ideology?” you talk about the “iPhoneization” of nutrition. Can you explain what you mean and what are the possible consequences of this process-fashion?

In my book, I promote the Mediterranean diet as a dynamic method that embraces individual diversity and evolves over time, and I introduce the concept of precision nutrition as a tool for designing a personalized lifestyle geared toward wellness and longevity.I strongly oppose the “coercive” or “totalitarian” tools that some governments, international institutions or commercial lobbies are trying to impose to address complex problems such as poor nutrition, obesity and noncommunicable diseases. Solutions such as front-of-pack stamps-for example, the Nutriscore-or purpose fees on fat and sugar, and even the so-called planetary diet, propose standardized approaches that undermine consumer freedom of choice. These tools favor large-scale food production at the expense of local production, culinary traditions, and cultural diversity. When I speak of the “iPhoneization” of nutrition, I am referring precisely to this tendency to standardize everything, making food a standard product, devoid of roots and personality, the same for everyone. It is a process that risks flattening not only flavors, but also our ability to choose and value the cultural heritage that food represents. We must oppose this standardization, promoting a model that is instead free, inclusive and capable of respecting local identities and individual needs.

This newspaper is about lifestyle. What do you think about young people relying on social media to choose what to eat, leaning toward places with more photogenic dishes than anything else?

Social media can be useful for discovering new ideas and trends, but their effectiveness depends on the critical sense with which they are used. Relying solely on the “photogenic” appearance of a dish risks reducing food to an aesthetic element, neglecting its primary function: nourishing the body and mind in a balanced way. The real challenge, however, will come with artificial intelligence. Soon, chatbots and AI agents will be able to recommend what to eat based on our physical and mental state, offering an unprecedented level of personalization. This represents a tremendous opportunity to improve food choices, but also a potential risk if AI is not managed transparently and ethically. Technology should be an ally for awareness and well-being, not a substitute for our critical sense. It is up to us to maintain control and use these tools to enhance, not limit, our freedom of choice.

Is it fair to say that the Mediterranean diet offers a valuable return to basics with a sustainable approach?

If by “back to basics” we mean recovering Aristotelian balance and Socratic critical sense, then yes, the Mediterranean diet represents a valuable return. It is not a rigid or static diet, but a method, a lifestyle that evolves with the times and adapts to individual and collective needs. The strength of the Mediterranean diet lies precisely in its flexibility: it is a model that promotes well-being and awareness, responding to contemporary needs without ever losing sight of its cultural roots. In this sense, it is a powerful tool for sustainable growth, not only environmentally, but also economically and socially. The Mediterranean diet is not just food: it is a balance between tradition and innovation, between pleasure and responsibility, a method that invites us to live better, respecting ourselves and the world around us.

THE AUTHORS:

Matteo Madafferi, a law graduate, has always had music and writing as his greatest passion. Oasisian to the core, he founded in 2013 the band The Ties, of clear Britpop inspiration, with which he recorded What’s Next, an album that reached number one on Amazon’s digital sales charts. A turner in various Oasis tribute bands, he has published Welcome Cuba (2016, The Scholar) and The Unconsciousness of Zeman (2020, Alter Erebus), from which a screenplay awarded at the well-known film festival Invent a Film in Lenola will be based. Since 2023 he has been one of the guitarists of Rockin’1000, with whom he played during the 2024 Coppa Italia final at the Olympic Stadium.

Francesco Sciarrone, graduated in Graphic Design and Communication at IED collaborates as Graphic Designer with several Italian agencies on advertising, packaging and publishing projects. A big fan of Brit Pop and 90s England, he actively participated in the Roman music scene of the early 2000s in bands such as The Shadow Line (2 albums and 7 ep), Formanta! (1 album, 2 ep) and Iommi (1 album). Since 2013, together with his wife Sabrina Gabrielli (Mynameisbri), he has been designing and screen printing limited edition gigposter for international bands.

At Casa Tyson, Las Vegas, tomato pasta and tiramisu for former world heavyweight champion

Economics, finance, artificial intelligence, sustainability, electric mobility, wine and food, but now Pietro Polidori, a South Tyrolean doc, with his five languages and 20 years of experience (17 countries around the world for hundreds of performances), is ready for big institutional challenges. Conducting and presenting is the essence of his life; he can master complex and varied topics with particular dexterity, with a noble purpose, as he too admits – “that of helping the audience to better understand the subject matter that is being dealt with, whether it is easy to enjoy or more laborious. And this is made possible both by a clear and crisp understanding of what is displayed on the stages and by a good knowledge of human nature, another less palpable but equally significant feature of such a craft.”

Pietro was born in Bressanone, in the Province of Bolzano, in the beautiful South Tyrol/South Tyrol, to a Genoese father and a German-speaking mother from South Tyrol. After graduating from high school in science, he moved to Austria, where he began studying architecture. Although he completed the university course with an excellent final grade, he already realized during his university years that he would probably not pursue a career in architecture. The world that fascinates him most is communications, a field in which he began working soon after graduation. After years of experience and commitment, Polidori finally lands on the stages of international conventions in several countries, solidifying his role as a presenter of prestigious events.

He has introduced and dialogued with international stars such as Sting, Andrea Bocelli, Arnold Schwarzenegger, Mike Tyson, Seal, Nicole Scherzinger, Jason Derulo, Flavio Briatore, as well as entrepreneurs, foundation presidents, managers and artists from various branches.

In interviews in which he tells his story he confesses: “already during my architectural studies I noticed that I did not mind talking in front of people. Atavistic in my nature. But it was in 2004 the beginning of my career. My first stage.”

Secret? “A presenter or anchorman should never prevaricate. He is not the protagonist. In fact, sometimes one is called a ‘moderator’ precisely because of the etymology of the term, being moderate and not overdoing too much self-centeredness and/or self-aggrandizement.”

Italian, English, German, French, Spanish, complete in everything, stage presence even, which-while not essential-surely helps in certain dynamics where elegance must play its part. And then maturity and personal growth: “I want to make it clear, it’s not about the plot, it’s about structuring the events. I have worked in the United States, a lot in Germany, France, Belgium, Switzerland, Spain, Hong Kong, Tokyo … also Denmark and Monaco. Conferences and conventions in dual languages (English), from pharmacological to banking to sustainable or pure business, private gala dinners with concerts (Bocelli and Sting for example) and other besides varied. Capri, Portofino, Porto Cervo…”

Among the various world tours, he certainly could not miss the juicy anecdote that sees him starring in Las Vegas, and not only on the stage in conducting, but in the guise of Chef Provetto (see photo) at the home of former heavyweight champion Tyson while, Polidori himself, cooks exclusively for his friend Iron Mike a timeless pasta al pomodoro and a delicious tiramisu!

And-for a man who has been able to rise to these levels-the dream not only seems clear and self-evident, but also concretely achievable: “To continue to grow both in number of engagements but more importantly in quality. What I aspire to are events with important institutional positions, whether national or European or world. Definitely it is among my most heartfelt short-term goals. A G7 or a World Economic Forum just to say, it would be a good litmus test and a test case that I would like to put myself on. And also position myself as one of the most engaged presenters — in terms of numbers — on the old continent.

Torino Fashion Week chooses Villa Sassi: Cloud9 designs a dessert and a cocktail for the occasion.

On June 27 and 28, for the second year in a row, the historic Villa Sassi residence will host the eighth edition of Torino Fashion Week. The annual event, conceived by Claudio Azzolini and organized by TModa with the support of CNA Torino and the support of the Turin Chamber of Commerce, will give space – from June 26 to July 2 – to emerging brands, young designers and small and medium-sized businesses, through fashion shows, meetings and workshops. “I am happy that this year too the event will be held in the splendid spaces of the Turin villa at the foot of the Basilica of Superga” says Azzolini. “Villa Sassi and Torino Fashion Week have a lot in common. After a past of great splendor, both have gone through difficult times. Their repositioning within the Turin panorama certainly required a lot of effort, but in the end it also brought great satisfaction to both of them”.

Once the residence of royal families and a holiday destination for politicians and artists, the residence is now confirmed as the ideal location to celebrate the future of independent, innovative, local, Italian and international fashion. If it is established as the backdrop for the first catwalks organized by CNA Federmoda scheduled for June 27 and 28, for the first time it is dedicating to the event – in the guise of Executive Chef Alessandro Braga and Head Bartender Roberto Palestini of Cloud9 (the American bar of the Villa) – a themed dessert and cocktail (alcoholic and non-alcoholic).

Last Jan. 21, 2023, after successes in Los Angeles, Aspen, Houston, and awards in Japan ,Israeli artist Shlomo Tuvia, transplanted to Los Angeles, joined the CCM Museum artists.

Present at the presentation of the works and the artist were CCM Museum President Mariagrazia Minio and Co-founder Carmelo Fabio D’Antoni Maestro D’Arte, who described the artist’s work as follows “With his personal painting technique, in a symbolic figurative, through faces, elaborate colors and dreamlike details, Master Shlomo Tuvia offers us, through his works, elaborate memories and deep emotions in which the viewer can identify with“.

His patient self-taught research also takes inspiration from great masters such as Salvator Dali, Picasso and Modigliani, research and talent that day after day led him to refine an artistic expression of great emotional impact, sometimes surrealist and sometimes expressionist.

The son of deaf-mute parents who survived the Holocaust, he took up painting to communicate with them, his works are thus the precious fruit of an inspiration of the soul and a difficult life experience that Master Shlomo Tuvia had to process on his own.

Shlomo Tuvia, class of 1958 is one of the most intriguing and influential artists in the Jewish community of our time.

Residing with his family in the San Fernando Valley, Master Shlomo Tuvia works primarily from his studio in Malibu.

He recently presented his work at the LA Art Show at the LA Live complex located in downtown Los Angeles and sold his artwork with great success in Japan .

His work is on display in several galleries throughout Los Angeles, including MRG Fine Art Gallery, and he has been selected to show his work in one of Italy’s most renowned galleries in Rome and Milan.

Another first is the arrival of New Chef, Marcello Corrado, at The Mindful Restaurant at Villa Eden.

Marcello Corrado, born in 1979, is Neapolitan by birth but his southern origins certainly blend with his experiences around the world and Italy.

From Rome, to Milan, via Salerno and Treviso, he deepened his extraordinary talents until landing in 2017 at Perillà in Val D’Orcia, where he earned his first Michelin star.

A promoter of seasonal, tasty cuisine with a focus on enhancing the local area, he became executive chef of Villa Eden in 2022, espousing its gastronomic mission: to offer guests a unique, tasty but above all healthy dining experience.

Il Borro, with the elegant suites in the ancient medieval Borgo and in the Le Aie complex, with the beautiful Villas that welcome guests as a home, is an ideal place to spend the Christmas vacations, offering different solutions and tailor-made activities for couples, families and groups of friends. The Borro

The estate since 1993 owned by Ferruccio Ferragamo in which his son Salvatore Ferragamo (today Responsible for the winemaking and hospitality activities of Il Borro) and daughter Victoria (Responsible for the Borro Garden and special projects.), extends in the Upper Valdarno basin over an area of 1,100 organic hectares nestled in the heart of Tuscany. Strongly devoted to respecting the environment and ecosystem and fully organic since 2015.

Il Borro is a member of the Relais & Châteaux Association and includes: a fully restored medieval hamlet that houses 38 elegant and refined suites inside; three prestigious villas – Dimora Storica, Villa Mulino and Villa Casetta – and the 20 suits of Le Aie del Borro. Added to the Relais & Châteaux solutions are “I Borrigiani,” three farmhouses managed under the agritourism formula. Born in 1990, he is a Catanian-born actor and dramatic author. He studied and graduated in 2013 from Fondamenta – The Actor’s School based in Rome.

He earned his acting degree by playing the title role of Rodion Raskolnikov in the stage adaptation of Crime and Punishment directed by Francesco Giuffrè.

The first time I set foot on a stage was in 1994, at the age of four. I have always loved the stage: characters come to life, magically illuminated by spotlights on their actors’ bodies. For this reason, at the age of 19 I left my beloved Catania, my loved ones, my mother and father and left for Rome to study acting. I graduated after three years with the play Crime and Punishment directed by Francesco Giuffrè where I played the role of Rodion Raskolnikov, the protagonist.

I left for a long tour that touched the Cyclades islands and the ancient theater in Epidaurus, Greece.

In 2018 I wrote my first play. The War of Paulinuzzu Millarti , published by Algra Editore and represented in many parts of Italy. The work was created from an interview conducted with Mr. Paolo Montalto and the memoirs collected by his son Francesco.

My last story, The Christmas Book won first place in the Hercules Patti National Award. The writing is based on an incident that happened to my paternal grandfather, Natale Puglisi, during the fighting in Yugoslavia in World War II.

Theater remains my greatest passion, but for the past few years, television and quality film have also become very interesting to me.”

Andrea Puglisi has faced training and working paths with prominent names in the theatrical scene including Eugenio Barba, Odin Teatret, Carlo Giuffrè, Giancarlo Sammartano, Giorgia Trasselli, Francesco Giuffrè, Renato Giuliani and Antonio Salines.

He specializes in dubbing with: Angelo Maggi and Massimo Corvo.

In recent years, he has been a leading participant in the performances of the Le Dionisiache festival at the ancient theater of Segesta.

She has been a teacher of stage movement and acting since 2013.

He has collaborated for years as a teacher with Fondamenta and the Ortzai Acting Academy in Vitoria-Gasteiz, Basque Country, and is the head of a European cultural exchange project between acting academies.

Since 2015 he has been specializing with Giancarlo Sammartano in using, theorizing, staging and teaching the mask of the New Greek Comedy and has been taking his workshop to Italy and Europe.

Plays in: Italy, France, Greece, Romania, Spain.

Starring in a variety of commercials such as Metro, ActionAid, Total Erg and IP, he has been the official voice of Salini Impregilo and other major brands on the national scene. In 2019 he won the Best Leading Actor Award and the Audience Award at the Romano InCorto festival for the play Cola.

His latest play The War of Paulinuzzu Millarti won the Tunis More South Award for dramaturgy, interpretation and direction.
